Shortly before I was diagnosed with MS, I had an allergen test. That came back with a minor allergy to eggs and a minor allergy to cow milk. Which is mostly going to be fine. I don’t eat eggs that often (and apparently using them in baked goods or as a binder changes them enough I don’t notice), but I really do like cheese. And since you can keep hard cheese unrefrigerated for a while (it sweats out milk fat, which looks a little ick, but it’s still edible), hard cheeses work well out on the trail.
To be honest, I might bring some cheese with me for the first few weeks anyway, but I might change that down the line. We’ll see.
